Maya Collection: From Monaco to Palm Beach
For the Maya Collection, the hotel and restaurant division of the JV Pastor Group, everything began 18 years ago with the MayaBay and chef, Christophe Dupuy. Since then, the concept of offering two distinct culinary experiences (Japanese and Thai) has expanded to Dubai and Porto Montenegro, before moving on to Courchevel, West Palm Beach (2026), Mykonos and London (2027). The MayaJah, which previously offered Indian and Moroccan flavours at Larvotto, is being relaunched in Doha. “Monégasque expertise is unique and it works abroad! A commitment to exceptional service is in our DNA. We listen to the customer. Every detail matters. We want to offer our clientèle high-end products, distinctive design and impeccable hospitality, whether they are spending €30 or €2,000 a head,” explains CEO Richard Maria, who is actively working to develop the group's brands internationally, in partnership with trusted partners. “For Mykonos, for example, we turned down several proposals before finding the perfect location, in the heart of the area where the biggest international hotel brands are, such as One&Only, Aman and Four Seasons.” The Maya Collection has been a pioneer in luxury ski resorts. Before the SBM, it will open the Maya Hotel in Courchevel in December 2025 – 14 rooms, including a 123-m² Lalique suite – after investing in the Refuge de la Traye, the first high-end mountain refuge in the French Alps, at an altitude of 1,650 metres. The group is not ruling out opening a boutique hotel in Monaco – provided they find the right location: “We don't want to open hotels with 100 rooms. We like the intimacy and personalised service of smaller establishments. Our slogan is, 'Welcome Home'..."
Diversification
Currently, the transfer of culinary expertise takes place in Monaco. "Every three months, we travel to our restaurants abroad to ensure the quality of the products but also to train and support the teams. Right now, we have the chefs from West Palm Beach with us for several weeks," explains Richard Maria. The JV Pastor Group has also invested in artisanal and French manufacturing companies, such as Maison Vertueux, which aims "to create high-end chocolate from the cocoa bean to the finished chocolate bar," and a production facility for mochi ice cream sandwiches in Beausoleil. This represents a significant diversification for a group that, following family tradition, began in real estate and construction with JV Pastor Real Estate and GP Construction, founded in 1994 in Monaco, with a team of 110 employees, as well as SuissCourtage, an independent insurance brokerage firm.
